How wine is made

Wine is one of the world’s oldest crafts, and its whole story is really just ripe grapes, yeast, time and a set of choices. Here’s the short, illustrated version — from the vineyard to your glass, what gives a wine its character, how to taste it, and the grapes that make the American South its own kind of wine country.

From grape to glass

At its heart, winemaking is fermentation: yeast eats the sugar in grape juice and turns it into alcohol and carbon dioxide, giving off warmth and aroma along the way. Everything else — every choice a winemaker makes — is about steering that reaction and what happens before and after it. Six broad steps take a grape to a glass.

1. Harvest. Grapes are picked when their balance of sugar and acidity is right — too early and the wine is thin and tart, too late and it turns jammy and high in alcohol. Timing the pick is one of the year’s biggest decisions.

2. Crush & destem. The fruit is gently crushed to free the juice, and the stems are usually removed (they carry bitter tannin). The result is a soupy mix of juice, skins and seeds called must.

3. Ferment. Yeast — wild or added — converts the sugar to alcohol over days or weeks. This is where red and white part ways: reds ferment together with their skins, which is where their colour, tannin and much of their flavour come from; most whites are pressed first and ferment as clear juice. A rosé simply gets a few hours of skin contact — just enough for a blush of colour.

4. Press. The new wine is separated from the solids. Many reds then go through a second, gentler malolactic conversion that turns sharp malic acid (think green apple) into softer lactic acid (think cream), rounding the wine out.1

5. Age. Wine rests — in stainless steel, which keeps it fresh and fruit-forward, or in oak barrels, which breathe a little air into the wine and lend notes of vanilla, spice and toast. Time in the cellar lets flavours knit together.

6. Bottle. Finally the wine is clarified, sometimes filtered, and bottled. Some wines are made to drink now; others keep evolving for years in the bottle.

Sparkling wine adds a twist: a second fermentation — in the bottle for the classic method — traps the bubbles. Sweet and fortified wines stop or spike the fermentation to leave sugar or add spirit.15

Inside the grape

Almost everything you taste in a wine is already present in the grape. Cut a berry open and you find three players. The skin holds the colour, the tannin (that drying, grippy feel) and a great deal of the aroma — which is exactly why red wines, fermented on their skins, are coloured and structured while whites are pale and softer. The pulp is nearly colourless and carries the juice: sugar, acid and water. The seeds add more tannin and bitter oils, so they’re treated gently.

The rest is terroir — a French shorthand for everything a place gives the vine: its soil, its climate, how much sun and rain it gets, its elevation and the way its slopes face the sun. The same grape grown in two places makes two different wines.

A vine’s year runs like clockwork: dormant through winter, bud break in spring, flowering and fruit set, then veraison in late summer — when the berries change colour and begin to ripen in earnest — and finally the harvest.11

How to taste it

Tasting is just paying attention on purpose. The old ritual — see, swirl, smell, sip — works because each step reveals something. Look at the colour and how pale or deep it is. Swirl to wake up the aromas. Smell before you taste — most of “flavour” is really smell. Then sip, and let it sit on your tongue.

Underneath the fruit, every wine is built from a handful of structural parts:

Tannin
The drying, grippy feel from skins, seeds and oak — the “backbone” of most reds.
Acidity
The tart, mouth-watering freshness that keeps a wine lively (and food-friendly).
Body
How light or full it feels — think skim milk versus cream.
Sweetness
Any sugar left after fermentation, from bone-dry to dessert-sweet.
Alcohol
The warmth; higher in riper, warmer-climate wines.

There are no wrong answers. If you notice whether a wine is light or full, sharp or soft, sweet or dry — you’re already tasting like a pro.

Wine in the American South

The classic European wine grape — Vitis vinifera, the species behind Cabernet, Chardonnay and nearly every famous name — evolved for dry Mediterranean summers. Much of the American South is the opposite: hot, humid and rainy, with mild winters. Those conditions bring three things vinifera can’t easily shrug off — Pierce’s disease, relentless fungal rot, and late spring frosts. So Southern wine leans on grapes that evolved to handle it: hardy natives and purpose-bred hybrids, alongside the vinifera that thrives on the region’s better-drained slopes.

America’s oldest native wine grape, bred in Virginia in the 1820s and made famous in Missouri, where it’s the state grape. Cold-hardy, disease-resistant, and the source of deep, dark, robust dry reds.5

Vitis rotundifolia — a different species

Native to the Southeast and built for its heat and humidity: thick-skinned and naturally resistant to Pierce’s disease. Distinctively fruity and musky, often in sweeter styles. Scuppernong, the bronze cultivar, is North Carolina’s state fruit.2

French-American hybrids

Bred to keep good wine quality while gaining hardiness and disease tolerance — Chambourcin (a deep red), Vidal Blanc and Traminette (aromatic whites) among them. The workhorses of Eastern wine country.9

None of this means vinifera can’t succeed — it does, on well-drained slopes and at higher, cooler elevations with careful canopy and spray work. Virginia has built its reputation on Viognier (its signature white) and Cabernet Franc, with thick-skinned Petit Manseng rising fast; Texas ripens warm-climate grapes like Tempranillo and Viognier on its High Plains.6

The region is now dotted with AVAs — American Viticultural Areas, the federally defined grape-growing regions that appear on wine labels. There are more than 270 across the country, and the South’s share keeps growing, from Virginia’s eight to multi-state areas like the Appalachian High Country, which spans North Carolina, Tennessee and Virginia.12 Every winery on this site sits somewhere in that fast-changing map.
